This is a luncheon size plate with red beans (sofrito of onions and peppers), polenta with a little Cheddar, stir fry veggies, and a small piece of home-breaded fish.

Looks delicious… even the fish. What kind of fish is that?

It is half of a fillet of catfish – shaken in seasoned flour, slipped through an egg wash, and then dredged in sourdough breadcrumbs, seasoned with Mama Judie’s secret ingredients*.
Not shown: the mini omelet I make with the leftover egg. I just pour it into the frying pan and sprinkle some tarragon on it. It cooks in about two minutes. I cut it in half, and no matter how tiny is each piece, it makes a cute little garnish on the plate.
*Which means I don’t remember what I used, and rarely do anything exactly the same way twice, anyway.
