Two-pepper Burrito

There was half a stuffed pepper leftover, so it became lunch for two, as you see above. I chopped up the stuffed pepper, added some jarred salsa, and a bit of cheese to hold it together, then rolled it up. A local grocery store provides roasted chiles, and a sliced tomato rounded out the meal. I could have put a spoonful of refried beans, or some of the red beans I had on hand, but our appetites were small that day. There was also a plate of sliced cucumbers to dip into.
