Eggplant, onions, red pepper, green pepper, roasted chile pepper, and tomato.
Chop into roughly equally-sized pieces and sauté over high heat. Stay attentive and push them around pretty constantly until they color up a bit. Sprinkle on a generous amount of rosemary, and a big handful of chopped cilantro.
Serve over pasta, sprinkle with feta cheese. Offer limes for freshly-squeezed juice as desired. Makes the flavors really sing.
