Pot Roast – Plain and Simple

I unearthed my Crock-Pot a couple of weeks ago. This bottom round roast turned out perfectly. We are not big meat eaters, so one roast lasts a looooong time. I put more than half of it into the freezer for later.

The Potatoes O’Brien were particularly tasty made with the tiny red new potatoes. They are all gone now, so I’m going to make some more to have on hand for future occasions such as this one.

    Could you post (or email me) how you made your potatoes O’B. I just bought a bag of sweet chili peppers and that looks like it would be a good use for some of them!

      Chop up your peppers. Do the same with some onion – regular or scallions. Saute them with cut up bits of cooked potatoes. Put whatever seasonings you like on them. I probably just put some oregano and Montreal Steak Seasoning, which is gritty salt, pepper, and garlic, on it.

      Fry them in coconut oil until they look crispy enough to eat!

      Eat with poached eggs!
