Mango Tango, Mardi Gras style

Mardi Gras is over now, but the bright colors and snappy taste of this mango salsa really pepped up our lunch of Peruano beans and brown rice. The sesame roll has a slim slice of jalapeño cheese melted on it, waiting for a avocado quarter to cover it with goodness. A red pepper ring added to the top, and a few random tomato slices . . . YUM!

    Add some pasta sauce to the leftovers, maybe some cabbage, or other stray veggies . . . presto – instant minestrone. If you have bits of meat leftover, toss them in, too.
