The Aftermath

Carbonara after

On Friday, we had two friends over for lunch. As usual, I made a lot of food. The good part is that we will have plenty of easy meals for a while.

Tonight’s easy meal is shown above. I steamed some fresh spinach, sautéed some red peppers and mushrooms, and reheated some angel hair pasta, with a couple of tablespoons of tomato salsa. A broken-up omelet, a few pieces of Mexican fresh cheese, and a small slice of Cheddar provided the protein. A sprinkle of Mexican scallions on top for DH. I would have liked some cilantro, but not having any, I settled for a more oriental touch by sprinkling on sesame seed oil and sesame ginger salad dressing.

We each used the microplane to shred copious amounts of frozen lemon over everything. It really made the meal sing!

    Frozen lemons? I have never heard of, how does one do and how long will they keep?

      Just wash one good with produce wash and put it into the freezer. After the first use, I would suggest putting it into a plastic bag. I use a microplane to scrape off bits directly onto a plate of food. It goes really well with almost anything.
