Protein Hit

lentil soup and

Avocado, generously doused with lemon or lime juice, a bit of Tony Chacheré’s Cajun Seasoning, on toasted homemade bread = heaven on a plate. Add another bit of bread with some pepper cheese and a thick, juicy tomato slice, and the angels sing.

Probably plenty of protein right there, but add a bowl of lentil soup (made mostly in a vacuum bottle) with onions and peppers, and this is a lunch fit for a queen! I feel healthier just remembering how delicious this meal was!

Being on a plant based diet, this is now outside my plan though it does look tasty and 3 years ago I would have gobbled it up for certain! Enjoy. =).
