Chicken Carbonara

Here is the start of one of my favorite dishes – pasta! I like it with almost anything, but this is going to be what we call “Carbonara”. Start with a bit of pasta (these are bow ties) and sprinkle on some cheese. I like Feta, but DH favors mozzarella, so already we are building different meals.

Next comes:

This is how it looks in the pan. I sautéed mushrooms, onions, red peppers, and zucchini, and then heated leftover roasted chicken breast in the middle of the pan. Each diner then chose his/her own amounts to add to the already-cheesed pasta, with additional freshly-shredded asiago cheese to go on top of everything.

Dh’s portion looked like this:

He sprinkled chopped Mexican scallions and black olives on his.

This is a quick and mega-yum meal – one of our favorites.

    Ok I am a pasta and feta frick – may I join you? 😉 Totally agree about fresh ingredients. The meal looks yummy!

      Hi Irena – Missed you this week! ;-> Feta is really good mixed in with tomato-y sauces, too. Or mixed gently with spicy chopped tomatoes to pour over chicken (or tofu!). It makes a plain pasta and tomato sauce dish more like lasagna without the extra work.
