Polenta and poached eggs – a favorite breakfast that we have a few times a year. What you can’t see in the picture is the smiles on our faces! Also, the melted white Cheddar cheese that totally livens up the polenta, and the golden runny goodness of the egg yolk. Can’t see his seedy bun toast, either, but it was covered in Seville Orange Marmalade.
Below is my finished product. At the end, I smeared some blackberry preserves on the last couple of bites of my whole wheat (with sunflower seeds) toast.
Don’t be afraid to make poached eggs. Clean up is a breeze, and you already have a pan of hot water to use for said clean up!
