There’s more here than meets the eye. The photo of this delicious salad does not come anywhere close to showing how super delicious and nutritious it was. Beneath the visible base of Romaine and bok choy, and the layer of Havarti cheese and homemade ceci beans (garbanzos), there are big chunks of tomato, avocado, and cucumber, which combined for a terrific taste treat. It took only a smattering of the Bolthouse Blue Cheese dressing to make this meal really sing. The whole wheat toast added a delightful crunch. DH had tomato slices on his toast, which had extra cheese on it.
Just the right amount of food for a late lunch!

That looks very good! And also more desirable right now than our Christmas dinner leftovers (we had our big Christmas dinner with family last night). Last night’s dinner was very good, but something light like that salad seems more appealing right now! Merry Christmas to you and Gary!

I love a good green salad with lots of things in it. Tomato, cheese, artichoke hearts, carrots, anything leftovers I have around like cooked broccoli, cauliflower, etc. and then good croutons. And good Bleu Cheese dressing. Yum!

I made a slight variation today – added fresh mushrooms and radishes to the same ingredients I had used yesterday. Forgot to take a picture this time.
