The GPS and the Lunch

lunch not taken

The plan was to go to either Tenneco Well or Whitewater Draw today on a photographic outing. The GPS wanted to be updated, but then refused to be cooperative. Time passed, and it was too late to go, so we had the lunch here. It was still quite delicious.

We’ll try again tomorrow, but the lunch will be different.

    That looks so lovely! I love how colorful it is, too. So what kind of sandwich is that exactly?

      I started by toasting a seedy bun, and then slapping on a slice of Havarti cheese and putting it back into the toaster oven to get smooth and soft. Last night for dinner, I had made the chicken strips (seasoned flour/egg/homemade bread crumbs, and sautéed in coconut oil), so today, I just reheated them in the panini pan where I had grilled the red peppers. A couple of big, fat tomato slices finished it off. But after I took the picture, I remembered that pepperoncini really make this sandwich sing out loud, so plopped some of them in there, along with some of the leafiness of the salad in the foreground!

    Wow, I hadn’t realised this was an iPhone picture until I read the comments. Its a great shot & this sure beats my simple ham sandwich I had for lunch. Feeling hungry now.
