That’s a Wrap

The plan had been to take a day trip over to Bisbee today to stalk the many photographic opportunities there, but the wind decided to play havoc with the dust today, and visibility is, uncharacteristically, almost zero. Weather reports say to stay indoors if at all possible – so we did.

The lunch for today was to be a glorious roast chicken wrap; and so it was – made yet even more glorious because I could add more messy things to it and still be able to get it into our mouths. It was definitely moved up into the “fabulous” category.

Not being good with recipes, I quickly scribbled down the ingredients, in roughly the same order I used them, to add to this post.

Tortilla, Taco-sized (medium)
Tomato Pesto
Chipotle White Cheddar Cheese
Asparagus Spears
Yogurt Honey Mustard Dressing
Peperoncini
Shredded Romaine Lettuce
Thinly-sliced Roast Chicken Breast

Before rolling his up, DH added green tomatillo salsa, and fresh deli red salsa. After the rolling up ceremony, I put on top a thin layer of sour cream to hold the red peppers, chopped tomatoes, and black olives in place.

Overestimating our appetites, I made three of these beauties, so now there is one left in the refrigerator – any takers?

    I love warps, and usually put chicken, chopped tomatoes, lettuce, avacado slices, cranberry and cream cheese. YUM. Or anything else that might be around or left over. Your wraps look delicious! 🙂

    Oh yes we tend to eat with our eyes not stomachs, so you roll up many and it still ends in the fridge. Can I have the left over please but I think I’m too late because three days have gone by. Next time there is left overs. it’s mine. I have booked in advance. The pictures are lovely and full of colour. Thanks for sharing!
