Blue Blueberry Pancakes

No need to adjust your monitor – yes, there is a blue rim around the edge of the pancakes.

Usually I use fresh blueberries for the blueberry pancakes, but they were so big, that I used frozen ones instead so they wouldn’t hold the batter up off the pan when I flipped them over.

Well, the batter turned completely blue/purple, but they baked up fairly well. They tasted wonderful with the added ghee-roasted pecans, butter and maple syrup on them. We had grilled ham and pineapple, too, on the plate. Very tasty.

I’ve been wanting to make blueberry pancakes as well as blueberry muffins, and I just bought a big bag of frozen organic blueberries at Costco. Those pancakes really look good.

Those look delicious! We’re gluten-free here…hmmmm…maybe almond flour?

Looks kind of like Antarctica without the ice and snow.

  4. As long as it tastes good, that’s the important thing. 🙂

Those look lovely with a nice golden brown color. I like the touch of blue in it. Makes for pretty pancakes.

You baked them in the oven? I cook mine on the stove top. I love blueberry pancakes. They are alway so delicious. I thought I was seeing blue…enjoy your day!
