Blueberry and Pecan Pancakes

This is how NOT to have BLUE blueberry pancakes. I tried mixing them in last time because when they are on top like this, the second side doesn’t get as nicely done because the berries hold the batter up off the pan in places.

But since only one side of the pancake is seen upon serving, I guess it doesn’t matter. One side looks great, yes?

I added pecans this time, too. Really good!

I’m told that the leftovers make an excellent midnight snack, and indeed, I see a diminution in the quantity in the refrigerator.

Not sure how I managed to get those unpleasant shadows in the pancakes at the bottom, but the real ones didn’t look like that. Operator error in Photoshop, no doubt. That’s what happens when you let amateurs play with the photo tools! ;->

      BYOB (bed). There are three of the pancakes sitting on the kitchen island right now because the refrigerator is so packed. I need to put them in a smaller container. Come help us out with this dilemma.

    Pancakes always bring back great memories for me. My mom made them for special occasions. I remember the first time I tried pancakes with ice cream. Delicious. I can only imagine how good the combination of blueberries and pecans taste. Yummy

    Now that’s the perfect brown color I love my pancakes to look. The other side’s not gonna get flipped over on the plate anyway. Very nice.

    The first side to hit the pan always looks prettier than the flip side..I worry more about the taste. Thanks for sharing!
