It was dinnertime, and offering a panini always meets with great enthusiasm. Again lunch had been late, so a lighter dinner was in order.
A traditional Club Sandwich has turkey, ham, cheese, and various other goodies, so I put in sliced roasted chicken breast slices, some Black Forest Ham, sauteéd mushrooms, and some Pepper Cheese. DH then added a whole lot of goodies – tomato, avocado, peperoncini, and who knows what all.
But what you see above is not that meal.
I wanted all the same ingredients, except for the bread. I much prefer pasta to bread, so I made my “club sandwich” up as a casserole. Bingo!
We had broccoli and butternut squash as side dishes – my broccoli was mixed into the dish, though.
Oh yum!! I’m with you on pasta rather than bread.

I love bread, but mostly just toasted, with butter. I use half whole wheat flour, so the bread has a wonderful flavor that appeals to me.
But shaped pastas, like these farfelle, are also fun to eat. Never could learn to prefer the whole wheat pastas, though.
So many delicious choices. Food is such a delight! ;->

It helps that I love almost all foods – NOT raw onions, and NOT garlic! Almost anything else is fair game.
