Red beans and rice, collard greens, and BBQ’d pot roast

I’m still practicing on Louisiana-style red beans and rice, and tonight I got TWO THUMBS UP from my Louisiana Boy! After his recent hospitalization, he needs to be careful about huge volumes of food at one sitting, so there was a major battle going on between him and the serving spoons.

For everyone who has enquired, I am happy to say that surgery was averted, and he is feeling perfectly normal now. The gallbladder problem seems not to have required a yanking, but more like some TLC. The problems were possibly brought on by the twenty fractions of radiation to a nearby area that he just finished.

Since he feels betterer and betterer (sic) every day, we are hoping that surgery is not even on the horizon at this point. Blood values point to this being a very high risk thing, so we are glad that it is off the table for now. Smaller quantities of food at a sitting seems to be the key.

    That’s good news Judi, I have been getting my blueberries at Sprouts for a better price than Fry’s, incase you should happen to have one in your area. I have frozen about 7#’s since last Wednesday.

      The blueberries are $.99 a pint at Fry’s all this week. We’ve snagged 12 so far. Hope to get in another trip before the end of the sale on Tuesday. They freeze beautifully, and we enjoy them for a long time – especially in pancakes! ;->

      Actually, that is my plate. We use luncheon-sized plates, so to pile on a huge amount is pretty difficult. But that doesn’t stop Gary from sashaying back and forth from the table to the stove a couple of times during a meal. ;-> Especially if it is red beans! He made one extra trip this time, and there are still a couple of portions left for tonight or tomorrow. He would eat them five days a week!
