Chicken Vegetable Soup

I’ve made a bunch of soups lately, but have been lax about photographing them. This was from about a week ago, and is pretty self-explanatory. The seedy bread, as you can tell from yesterday’s entry, is our current favorite.

Snagged an early morning coyote at the water pond a couple of days ago. See him at ANIMALS SPOTTED.

      Don’t really remember specifically, but I usually use onions, carrots, celery, and red pepper, if I have any, as a base, and then just add in whatever little bits and bobs of leftover veggies are hanging out in the fridge. And the chicken bits and broth from having made bone broth from the chicken carcass. I think that particular day, I didn’t have any leftover pasta, rice, or whole grain, so I probably boiled up a small amount of tiny shells.

      A couple of spoonfuls of fresh salsa always adds a nice zing, as well as any little bit of fresh tomato hanging around, or some marinated, sun-dried tomato shreds. If you have some beans you want to use up, toss ’em in, and call it MINESTRONE! If you are lucky enough to have some lemon, a couple of squeezes of juice is magnificent!
