Well, almost free. This meal was made entirely of leftovers, didn’t use the microwave, and certainly was fuss free, that’s for sure. We can’t stop talking about how delicious this meal was, and how nourished we felt after eating it.
I heated the campagnelles in a steamer, the broccoli in an eight-inch frying pan with a little water and butter in it, sauteed some mushrooms, and then added in a container of red peppers and onions that were leftover from the afternoon’s burger lunch. There were good-sized chunks of both roast beef and chicken breast in a nice sauce, so in they went to heat with the veggies. The sauce I had made with chicken broth and arrowroot, and the topping is finely-shredded Parmesan cheese. Things heated to perfection, and we were gobbling our meal in about ten minutes, start to finish.
There is still enough leftover for a generous lunch portion on another day.
