Resurrection Pizza


Remember the pizza I made a few days ago?  We’ve been eating the other half for lunch over the last couple of days.  Yesterday I added a strip of mozzarella on each slice and plunked in a few nibbles of pre-cooked Italian sausage while it heated in a covered, non-stick skillet.  Take the top off if it looks like it is too moist in the pan. This method seems to quite nicely recrisp the crust, whilst keeping the top moist and delicious.

      It really was about 90% as delicious as fresh outta’ the oven! There is still that small, triangular piece left for us to fight over today. Poached eggs and pancakes coming up next for breakfast this morning.
