I made a whole wheat, two-topping focaccia – one half was regular Italian herbs, and the other was a light pesto. Both sides were good.
Here you see one half of the herb side cut into long, slender “fingers”, and then re-toasted in the toaster oven.
So crunchy – just right with this very rich potato-sausage soup.
I added roasted red peppers, slow-sautéed sweet onions, and some spinach. The liquid was about half ham bone broth, and half milk. We had shredded extra sharp Cheddar on top (his) and Berbere on mine. Very satisfying with a big bowl of field greens, topped with garbanzo beans and diced tomatoes.
Lessee now. . .the G-Man has GOT to weigh in at, oh, a thousand pounds or so?
All that dee-licious food. . .sigh.

That sounds like a mouthwatering soup. I love the addition of sharp Cheddar, ham broth, roasted red peppers and slow-sautéed sweet onions. And being a carnivore at heart the addition of sausage is a bonus for me. Thanks for making me drool. Have a wonderful Sunday.

Yes, it is a very satisfying combination. The sweet onions really add a lot if they are slowly sautéed to their maximum sweetness.

I’ve always loved potato soup, and the addition of sausage can only make it better.

As far as DH is concerned, nearly everything goes with sausage! I cook up three pounds at a time into little meat balls or patties and freeze them. Then I can easily plop them in whatever he is eating. That way I don’t need to eat so many of them. I like them . . . but just not as often as he does!

Do you buy a particular brand of sausage, or the meat department sausage in bulk?

I buy whatever is on sale. Our favorite is bulk, but if it is casing sausage on sale, I get that and make little medallions.
