Tapas for One


Remember those little cheese rolls?  Well, they quite handily provided the base for other bits of leftovers, and with the crunch and moisture of the red pepper, tomato, and cucumber slices, this was a real taste treat for a lunch a few weeks ago.

    What a good use for the cheese rolls. I thought they looked like crostini – I have some tomato flavored crostini that I use for the same purpose once in a while.

      I’ve always liked little bits of “stuff” for lunch – or even dinner, for that matter – but now that I know there are two ways (deconstructed and tapas) of identifying it, all the better. ;->
