Omelette as a Reward

A few bites of this omelette and he forgot all about the unpleasant prep yesterday and the 6:15 am arrival time at the hospital this morning. The dreaded colonoscopy is over! Better yet . . . a clean report! Nothing amiss. Come back in five years!!! ;->

The omelette was filled with Cheddar cheese, mushrooms, roasted red/yellow/orange peppers, bacon, and broccoli, topped with fresh salsa and a bit more Cheddar on top.

The new ratio of spelt flour in the bread has really made the difference in the toast that accompanies this delicious breakfast. I can’t tell you what the difference is, but the ambience is just fabulous as it is eaten.
