This was my first try at lamb chops. They came out really good, but I’m not sure I want to do it again. Despite how they look, there really isn’t much actual meat on the chop, and the flavor was very different from beef, pork, or chicken.
It was hard to put the picture of frolicking lambs out of my mind. I much more enjoyed the green chard and the mushrooms and onions draped over the bulgur and generously drizzled with thick, sweet balsamic vinegar.
