Lamb Chops




This was my first try at lamb chops.  They came out really good, but I’m not sure I want to do it again.  Despite how they look, there really isn’t much actual meat on the chop, and the flavor was very different from beef, pork, or chicken.

It was hard to put the picture of frolicking lambs out of my mind.  I much more enjoyed the green chard and the mushrooms and onions draped over the bulgur and generously drizzled with thick, sweet balsamic vinegar.

    I never cared much for the taste of lamb, but when I lived in Ireland one of my neighbors had a couple of his lambs butchered and wrapped some chops for me. I thought they were so delicious I couldn’t believe I hadn’t eaten them but just a few times before. When I got back to the US and tried them again they just weren’t the same. It takes that beautiful green grass in Ireland to give them the flavor, I suppose.
