By now everyone probably understands that we really do love peppers . . . not hot peppers, but these lovelies. It makes me happy just to look at this picture and remember how delicious these peppers were in the stir fry that they engendered.
I can see why so many countries use these colors in their flags.
A feast for the eyes and the bellies!

Crunchy and so flavorful, it’s hard to remember that they are packed with nutrition as well.

They are a favorite of ours – so refreshing raw, delicious roasted, or even cooked into a dish. I keep dehydrated ones on hand for the off season. Only good for cooked dishes, but add nice color and a bit of flavor along with the nutrition.

I love to eat filled peppers, that’s a wonderful Greek dish. Do you like that, too?

Oh, yes – definitely. I make stuffed peppers all the time. The best of both worlds! Yesterday for lunch I took a cooked stuffed red pepper, mashed the whole thing up and added a bunch of Mexican seasonings, and served it over a tostada with avocado, shredded Cheddar cheese, sour cream and olives. No one would ever know it had started life as a stuffed pepper. Best thing . . . there is one stuffed pepper left, so I can do it again – as requested.
