Probably an overworked phrase, but this really was just that. Stir fry some veggies, add some beef pieces, add some curry powder to broth and flour for the curry sauce – and this delicious meal is ready faster than you could heat up something frozen out of a box.
Served with planned-over whole grain bulgur instead of rice for a change. A sprinkling of smoked paprika added some nice color and flavor to this MILD beef curry dish.
Snagged nine more red peppers while they were on sale, so a good roasting is on tap for this afternoon. They freeze well, but it is easy to gobble up an entire half of one on top of a sandwich.

I just acquired some long red peppers, Cubanelle I think. I’m looking forward to doing something with them. I love roasted peppers on a sandwich.

I’ve got sourdough rising at the moment, and a corner of the counter covered in red peppers for roasting after the bread comes out!
