    Exactly! I just slice up an eggplant and the biggest zucchini I can find, smother them with pasta sauce from a jar, and pile on the cheese sprinkled with Penzey’s Italian Seasoning! It doesn’t take long at 500° to have these ready to eat. Makes enough for two dinners as a side dish.
