There was still a smidge of fresh spinach lurking in the bottom of the package, so I left a bit of the bacon grease in the frying pan and added the spinach. It cooked beautifully, making a bit of its own “gravy”. I rewarded it with a bit of gorgonzola cheese, and a crumbled strip of the original bacon.
It made a big hit at the brunch table.
Spinach is delicious! I love that you cooked it in bacon grease. I save my filtered bacon grease in the refrigerator and use it for so many recipes.

DH eats a half slice of bacon every morning with his two blueberry pancake pre-breakfast, so I don’t make it often. There always seem to be three small jars of it in the refrigerator, so when I run out of room, I just toss the oldest one.
It was great with the spinach and salsa.

I cook up 3/4 of a pound at a time in half slices, and then reheat with the two blueberry pancakes (also made in advance) for him each morning. He eats that when he first gets up, and then cooked cereal and fruit/yogurt/granola/seeds, etc. for his regulation breakfast.
