While waiting patiently to have its cataract removed, NOLA Boy’s right eye was able to help with eating this delicious lunch. We had to cancel the scheduled time last week because of low blood counts, but we were more than thrilled on Thursday to find that his platelet count is now high enough to re-schedule the second eye early next month.
We are convinced that meals like the above help with sustaining life under these very difficult circumstances. His precious cheeseburger is accompanied by a generous scoop each of Cole slaw and potato salad, and those life-giving red lovelies on the side.
I had been experimenting with my Instant Pot and hard boiled up a dozen eggs, so potato salad and Cole slaw were then on the lunch menu. I also made some egg salad, but just a small amount for myself, so no picture.

Looks very delicious indeed, I think I will have me an egg salad here in a bit, something I can eat on my Atkins diet.
