Fancy Pants Chili con Carne
For some reason, when I fill my plate for a meal, I seldom remember that I will probably be taking a picture of it, so, as usual, the placement of the food in this picture is not ideal. Clearly the … Continue reading

Potatoes are a good source of potassium. We got into the habit of eating them frequently when DH was first home from the hospital after his transplant. He was having a two-hour infusion with potassium in the cancer clinic … Continue reading

Persimmon Foo Young
There were four lovely Egg Foo Young patties left, so this was our lunch the next day. I added some cooked shredded carrots to the leftover sauce, and topped it all with cilantro and sliced scallions. The little crescents … Continue reading

Out of the Frying Pan, and . . .
One of our favorites – with so many variations. This one had: Angel hair, a melange of mushrooms, onions, Italian sausage, tomatoes, and peppers, and smoked Gouda cheese. I made a separate three-egg omelet in my wonderful Aeternum frying pan, … Continue reading

The Mexican Plate
DH had this. Not shown: A layer of White Cheddar Cheese between the tostada and the toppings. I had this. The beets made the cauliflower blush! And we each made a delicious salad with this.
