We celebrated Cinco de Mayo today. I know . . . a bit late. But here’s what we had.
First I made this beef and bean tostada for DH, and while he was eating it,
I made him this burrito, using the same filling.
While he was snarfing down the burrito, I made myself this burrito. Yup – same filling.
There is still enough filling left for two more burritos or tostadas, or maybe I will add some chili beans to it and serve it over rice.

It was a very late lunch, so dinner didn’t happen until about 9:30. These Continental Dinner Hours have got to go!

DH is a lucky man. I hope he enjoyed all the food you made. Do you ever miss cheese in your house? I notice the even prettier plates you’ve used. Have a lovely weekend. I am going for a walk in the mall…nothing to do and weather is awesome!

Miss cheese? We eat copious quantities of cheese. I have about a dozen different ones around all the time. Cheese is a staple, fur sure! Have a good walk. Breathe deeply and smile! ;->

Hopefully we can count on a lot more red peppers soon. They are a favorite – just pan grilled to bring out the sweetness. He had a repeat today of what you see there – his choice! ;->
