For those of you who have enquired, above is a complete copy of my personal cookbook!

The cornbread recipe is taken right off the side of the box – back when cornmeal came in rectangular boxes – many, many years ago. I have been buying organic cornmeal via mail order for a long time, so this copy of the recipe has become all the more precious.

The one for the pancakes is my only original recipe that I have written down. As I tried different amounts and methods, there were some batches more successful than others. When it seemed right, I had just scribbled a list of the ingredients on the smallest yellow sticky note and stuck it to the inside of a kitchen cabinet door. It was making Gary very nervous that somehow this would get lost.

So he took the bull by the horns, so to speak, and typed up the ingredients, and asked me for a photo, and the mixing method. The cornbread recipe was temporarily confiscated, too, and enlarged on the printer.

Among all of his talents, he is also a master laminator. So now I have two copies of each of these recipes – one for the house and one for the motorhome.

    Great idea. I did the same thing with the Golden Grain Lasagna noodles from years ago. I cut the recipe off the box and put it in my recipe box, just in case. One day it was gone, and I don’t know if I loaned it to someone, or what. I never felt my lasagna was quite as good after that. And I couldn’t find Golden Grain Marinara Sauce any more, which was part of the recipe, either. That made a difference.

    Sometimes the recipes off the boxes are wonderful. I love the one bowl brownie recipe that comes on the baking squares box. 🙂

      The easier, the better! Your take is the same as mine. They have a vested interest in providing you with the best possible outcome so that they are assured of a repeat customer! Sometimes a recipe will look too simple, and I use them only as a guide, usually, but still – they are a good starting point. This cornbread recipe has been diddled with by me for decades, yet I’ve never found a more suitable variation. This ALWAYS comes out completely perfectly without being too dry or too gummy.
