This was my first try at lamb chops. They came out really good, but I’m not sure I want to do it again. Despite how they look, there really isn’t much actual meat on the chop, and the flavor was very different from beef, pork, or chicken.
It was hard to put the picture of frolicking lambs out of my mind. I much more enjoyed the green chard and the mushrooms and onions draped over the bulgur and generously drizzled with thick, sweet balsamic vinegar.
Looks very tasty! 🙂

I might learn to like the taste, but it was strange to me this time.

Maybe you’ll enjoy it better as a stew. Check the Search button on my blog – I have quite a few recipes for lamb stew. 🙂

Great combination. I really love the onions and the greens on the side. The chops look delicious too! Happy New Year!

I liked the chard and onions a lot more than the lamb! ;->

I never cared much for the taste of lamb, but when I lived in Ireland one of my neighbors had a couple of his lambs butchered and wrapped some chops for me. I thought they were so delicious I couldn’t believe I hadn’t eaten them but just a few times before. When I got back to the US and tried them again they just weren’t the same. It takes that beautiful green grass in Ireland to give them the flavor, I suppose.

It was quite a different taste for me. Even the broth that I made with the bones had a different flavor.
