Soup Salad Sandwich

The three “S’s” of good eating.

After a morning of slinging boxes around in our storage room, this late lunch proved to be just right. How can you go wrong with a roast chicken, pepper cheese, and tomato panini on homemade focaccia, a crisp Romaine salad, and a bowl of enhanced broccoli soup?

    The soup is what catches my eye. What is in it besides “enhanced” broccoli?

      Well, it started out life as broccoli cheese soup, with mushrooms. Then there were leftovers from the veggies on the plate with the Israeli cous cous, so they went into the pot that day to augment the amount we had. Turned out “just right” in the amount department, so everything disappeared. Yay! No waste! Just about anything that you like can go into soup.
