Orzo With Mint Salmoriglio Sauce

What we like about ad hoc dining is that I can easily make a lunch or dinner for each of us according to our desires at the moment. DH had BBQ beef on a seedy bun, with appropriate veggie side dishes, but I had the above deliciousness, inspired by a blog I had read moments before (see above).

I just substituted what I had on hand, and gobbled my way through all that delightfulness! I was pretty hungry, so failed to realize that a sprinkling of capers would have added a delightful tang, as well as a few black and/or green olives. The zing was actually provided by the zest from about half a lemon, and then the juice from that half squeezed over the whole thing only moments before my fork, which seemed to have a mind of its own, made its way to the plate.

    That inspiration dinner looks yummy. Lots of veggies and is that chicken? I love veggies as long as it’s sprinkled with chicken.! thanks for sharing!
