SOMEone had made a piggy of HIMself at lunch time with a burrito, and wasn’t hungry at dinnertime. Also – Doc Martin.
So I made myself an omelet that looked like the above before I folded it over and like this (BELOW) after folding.
Note handy dandy skinny spatula; a great tool for so many things.
Of course when DH saw my omelet, he ordered one for after the television show was over. His looked like this:

Ah, I love omelets but can’t flip them to save my life. I usually end up making frittatas. Your omelets look delicious.

Frittatas are fun, too. It’s easy to flip them – just don’t put a lot of stuff on one side. Then it is easy to get it across the other side. The Swiss cheese stayed connected to the eggs, so all was well. Just slide an appropriate tool under one side, turn your wrist a bit, and flop it down on top of the fillings. Then dive in. I think omelets are the quickest disappearing of all foods. They’re great for using up little bits of this and that since you can put absolutely anything that you fancy in it. I put some of the tomato pesto in with the eggs when I whipped them up, and about a tablespoon of half and half. I didn’t really taste the tomato pesto as such; it was just added a nice, hearty flavor to the egg part.

The new season is on PBS, but boo-hoo, only one episode left in Season Six.

Hopefully, I can watch it online. You’re right–it’s hard to see our favorite shows end their seasons. I think Call the Midwife is coming up soon!

Can I also order mine for lunch? It’s hilarious the way you can just sit at home and order an omelette. I want mine with more greens and mushrooms and a extra large slice of cheese…I’m going to make myself an omelette tomorrow exactly like the one you have here. I have some Swiss chard, mushrooms and bacon….I can’t wait to gobble and sigh with relief. Thanks, Judie for sharing. You have inspired me!!!
